Banana Bread is a great source of protein and energy when doing anything physically tough. Its also perfect for snacking on while hiking or on a family picnic.
250g Plain Flour
1 Teaspoon Bicarbonate of Soda
1/2 a Teaspoon of Salt
1 Teaspoon of Cinnamon
115g Butter
115g Dark Brown Soft Sugar
2 Eggs
6 Mashed Ripe Bananas
100g of Chocolate Chips
Method
1. Preheat the oven to 180 C / 350 f. Grease a 25cm x 15cm loaf tin.
2. In a large bowl, combine flour, bicarbonate of soda, Cinnamon and Salt.
3. In a separate bowl, mix together the butter, dark brown sugar, eggs and Bananas.
4. Stir in flour mix into the banana mix, add the chocolate chips, gently mixing them in with a spoon.
5. Pour the mix into the greased loaf tin
6. When the oven has preheated, bake for 60 to 65 mins, or until a knife inserted into the centre of the loaf comes out clean.
7. Take out of the oven and leave to cool, still in tin, for 10 mins. Then turn out onto a wire cooling rack.
